Have you played any of the Kingdom Hearts games? If so, you’ve probably seen sea salt icecream make an appearance. It’s a salty / sweet mixture and has a delightful greenish blue tint.
It’s very easy to make at home and playing the games is not necessary to enjoy the recipe 🙂
Homemade Sea Salt Ice Cream Recipe
- 2 eggs
- 2 cup milk
- 1/3 cup sugar
- 1 tsp vanilla essence
- 1 cup heavy whipping cream
- sea salt
- 12 drop blue food coloring
- 3 drop green food coloring
Separate the egg whites from yolks, putting each into separate (large) bowls.
Beat the egg whites until nice and firm.
Mix the sugar into the egg yolks and continue mixing until it becomes thick.
Gently heat the milk in a saucepan. Bring it to a boil over a medium heat and make sure to stir from time to time.
This is the tricky part - add the sugar & yolk mixture to your milk, still on a medium heat. This will form a custard but be careful not to let it boil as that will ruin it. Get the mixture as thick as you can.
Allow the custard to cool a little and then fold into the beaten egg whites until thoroughly mixed.
Add the sea salt to taste. Be careful here because if you add too much it will not taste good. Add a little at a time and keep tasting as you go.
Put the mixture into the fridge for around 30 minutes to cool down.
Once cooled, add the cream and vanilla and the food coloring. This is optional but it looks better with some color!
Now use your favorite ice cream maker to freeze until perfection!
